Mother's Lemon Custard Cake Submitted by: Doug Warburton
I would like to share a cake that both my mother and grandmother baked. I consider it to be more of a custard than a cake, but they called it cake. I modified the name a bit.I love this cake and it is easy to make. I also happen to like the taste of lemons as well, so go figure? My mouth is already watering thinking about making this for my girls. Mother's Lemon Custard Cake (My choice for a birthday cake...) Notes: c = cup, t = teaspoon, T = tablespoon For those that don't know, it is best to put all the dry ingredients together in one bowl, and the wet ones in another like the mixing bowl. If you have a sifter, that is great, a wire drain with very, very fine holes works just too!. I was raised to mix everything dry together. That way it is all blended together before it is put in the wet mix and doesn't loose any flavor. 1 rounded Tbls butter which should be soft. Add 1 c. sugar Cream these together with your mixer until smooth Place 3 Tbls flour and a pinch of Salt (give or take) together in your sifter because it gets out any lumps that might be in there. 4 Tbls lemon juice 3 egg yolks 1 c. milk Add the lemon juice, egg yolks ( yes you need to separated the yolks from the whites) and milk into your wet mix and mix them in. Place the whites in another bowl for mixing later. 3 egg whites, beaten stiff. Meaning if you put your finger into it, they make a "peak" when you pul it out. Add in order given, folding in egg whites last is important. Use a wooden spoon or what you have available and GENTLY fold in the whites. Please do not use a mixer. The cake will not come out as you would expect. or like. Bake in buttered (oiled, or Pam) cups (6) or in 1 qt. baking dish, set the in pan of hot water. This is the indication the dish is really more of a custard, similar to Cheese Cake. Serve hot or cold, either in individual cups or on plates. Bake 350 Degrees for 1 hour If you let it cool, and then place the cup upside down on a dish, you get a very nice presentation and you can add different toppings to it. I use powdered sugar and simply sprinkle a bit on it to fancy it up a bit. MMMM..your gonna enjoy!! And so will your kids when they see what you can do!! I have mine help me anytime we bake or cook so they can learn to as well! You don't have to worry about giving them something that is considered junk food, but something fresh from the oven and is "Home-made" to boot and it makes the house smell really good! Happy baking!
