Great Grandma Kastle's White Salad This was for Christmas dinner. This a great salad for a picinic and easy to pack and also if no fresh veggies or fruits are available. It's great caloric salad. Notes: c = cup, t = teaspoon, T = tablespoon 1 lb. almonds (cut up) 1 can pineapple (small can) cut up if you can not find fresh. 1 lb. white cherries canned and/or fresh white grapes (cut up) Note: these are "Queen Anne cherries" 2- 10cent packages of marshallows –cut up(this is an historic measurement you'll note). The translation is about 3 cups and you can use new kind of cut up ones.) Cook in double boiler: 1 c. milk--a little less 4 yolks of eggs beaten Pinch of salt Let the mix just come to boil and get a little thick. When COLD: add juice of 1 lemon -- taste to see if more. 1 c. of whipped cream. Stir in fruit. Salad should stand at least 12 hours. Do not put in tin pan. Glass or plastic due to the metel taste from the tin pan. Cut in squares and serve on lettuce with salad dressing with whipped cream added or just a small spoonful of whipped cream. This salad was the kind made back in the day, mostly in winter due to lack of fresh fruits available in the mid west. I like it and it is another easy thing to make There are no comments yet!
